I'm heading off camping this weekend and for my snack type meals, I ended up going to the store and picking up a box of granola bars. I had a couple of them at home and was sorta taking a bite out of one when I thought to myself.. 'This thing is pathetic. I can do better!' And so I did. I made me some granola bars and here is the recipe so you too, can do better!

Granola bars

  • 1/2 cup butter
  • 1 1/4 cups packed brown sugar
  • 1 heaping tablespoon of honey
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups quick cooking oats
  • 1 1/4 cups crispy rice cereal
  • 1 cup raisins
  • 1 cup semisweet chocolate chips
  • 1/4 cup sesame seeds

          In a mixing bowl, cream butter and sugars. Add honey, vanilla and egg; mix well. Combine dry ingredients; add to creamed mixture. Stir in oats, cereal and nuts. Add raisins or chips if desired. Press into a greased 9 x 13 pan. Bake at 350 for 25 to 30 minutes or until the top is lightly browned.

          Once it cooled a bit, I took it out of the pan, cut it into bars and then wrapped the bars in wax paper. All measurements are approximate, so feel free to alter the recipe where common sense demands. One batch should make about 16 bars or so, depending on how big you cut them.
